- 2 (15 oz) cans chickpeas, drained, rinsed, and patted dry
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ½ tsp salt
For the Salad
- 4 cups romaine lettuce, chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- ¼ cup red onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- 1 avocado, diced
For the Chili Lime Dressing
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 tsp honey or maple syrup
- ½ tsp chili powder
- ¼ tsp cumin
- Salt and black pepper, to taste
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for roasting the chickpeas.
- Prepare Chickpeas: Pat the chickpeas dry thoroughly with paper towels to remove excess moisture for crispiness.
- Season Chickpeas: Toss the dried chickpeas with olive oil, chili powder, smoked paprika, garlic powder, and salt until evenly coated.
- Roast Chickpeas: Spread the coated chickpeas on a baking sheet in a single layer and roast for 25-30 minutes, shaking the pan halfway through to ensure even crispiness, until golden and crispy.
- Prepare Salad Base: While the chickpeas roast, combine chopped romaine lettuce, diced cucumber, halved cherry tomatoes, diced red bell pepper, thinly sliced red onion, chopped cilantro, and diced avocado in a large bowl.
- Make Dressing: Whisk together olive oil, fresh lime juice, honey or maple syrup, chili powder, cumin, salt, and black pepper in a small bowl until well combined.
- Assemble Salad: Add the freshly roasted chickpeas to the salad, drizzle with the chili lime dressing, and toss gently to combine.
- Serve: Serve the salad immediately to enjoy the maximum crunch and freshness.
Notes
- Add grilled chicken or shrimp for extra protein.
- For maximum crunch, add the chickpeas just before serving.
- Store the dressing separately if preparing the salad ahead to keep ingredients fresh.
- Use mixed greens instead of romaine for variety in flavor and texture.
