Ingredients
Chicken Bites
- 1½ lbs boneless, skinless chicken breast, cubed
- ½ cup cornstarch
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 eggs, beaten
- Vegetable oil, for frying
Thai Sauce
- ¼ cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon sriracha (optional)
For Garnish
- Sesame seeds
- Chopped cilantro
Instructions
- Heat the oil: Heat vegetable oil in a deep skillet or frying pan to 350°F (175°C) to prepare for frying the chicken bites.
- Prepare the coating: In a bowl, mix together the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper to create a seasoned flour mixture.
- Coat the chicken: Dip the cubed chicken breast pieces into the beaten eggs, then thoroughly coat them with the seasoned flour mixture to ensure a crispy crust when fried.
- Fry the chicken: Carefully fry the coated chicken pieces in batches in the hot oil for 4 to 5 minutes until golden brown and cooked through. Remove and drain on paper towels.
- Make the sauce: In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, lime juice, and optional sriracha until well combined.
- Toss chicken with sauce: Place the fried chicken bites in a serving bowl and toss with the prepared Thai sauce to coat evenly.
- Garnish and serve: Sprinkle sesame seeds and chopped cilantro over the sauced chicken bites before serving for added flavor and presentation.
Notes
- For a healthier alternative, air fry the coated chicken pieces instead of frying.
- Serve with jasmine rice or a fresh salad to round out the meal.
- Toss the chicken with the sauce just before serving to keep the coating crisp and prevent sogginess.
