Description

These crispy rice paper dumplings feature a deliciously savory vegetable filling wrapped inside delicate rice paper and pan-fried to golden perfection. Packed with fresh cabbage, carrots, mushrooms, and aromatic seasonings, they create a light, gluten-free appetizer or snack that’s easy to prepare and customize with various proteins or double wrapping for extra durability.

Ingredients

Dumpling Wrappers

  • 10 rice paper wrappers

Filling

  • 2 cups shredded cabbage
  • 1 cup grated carrots
  • 1 cup mushrooms, finely chopped
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil (for filling)

For Frying

  • 2 tbsp oil (for frying)

Instructions

  1. Prepare the Filling: Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add minced garlic and grated ginger, sautéing for 30 seconds until fragrant.
  2. Add Vegetables: Stir in shredded cabbage, grated carrots, finely chopped mushrooms, and sliced green onions. Cook while stirring occasionally until the vegetables soften, about 4-5 minutes.
  3. Season the Filling: Mix in 1 tablespoon of soy sauce and 1 teaspoon of sesame oil to the vegetable mixture. Stir well to combine and remove from heat.
  4. Soften Rice Papers: Dip one rice paper wrapper into warm water for 10-15 seconds until pliable but not too soft.
  5. Assemble Dumplings: Place a spoonful of the vegetable filling in the center of the softened rice paper. Fold the wrapper into a square or rectangle shape to encase the filling securely. Repeat this process with the remaining wrappers and filling.
  6. Pan-Fry Dumplings: Heat 2 tablespoons of oil in a clean skillet over medium heat. Carefully place the dumplings seam side down and cook for 3-4 minutes per side, turning gently, until each side is golden brown and crispy.
  7. Serve: Remove the dumplings from the skillet and drain on paper towels if desired. Serve hot with soy sauce or sweet chili sauce for dipping.

Notes

  • For extra durability and to prevent tearing, try double-wrapping each dumpling with two rice paper wrappers.
  • These dumplings can be air fried at 375°F (190°C) for 10-12 minutes as a healthier alternative to pan-frying.
  • Customize the filling by adding tofu, shrimp, or chicken for varied flavors and proteins.
