Ingredients
For the Wraps
- 2 cups cooked chicken, shredded or chopped
- 4 large flour or whole-wheat tortillas
- 1 cucumber, thinly sliced
- 2 cups baby spinach or mixed greens
- 1 avocado, sliced
- ½ cup shredded carrots
- ¼ cup red onion, thinly sliced
- ¼ cup crumbled feta cheese (optional)
For the Green Goddess Dressing
- ½ cup Greek yogurt
- ¼ cup fresh parsley
- 2 tbsp fresh basil
- 2 tbsp fresh cilantro
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 small garlic clove
- 1 tsp honey or maple syrup
- 2–3 tbsp water
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Prepare the Dressing: Add Greek yogurt, fresh parsley, basil, cilantro, lemon juice, olive oil, garlic, honey or maple syrup, salt, and black pepper to a blender. Blend until smooth, gradually adding water as needed to achieve a creamy but spreadable consistency.
- Warm the Tortillas: Briefly warm the tortillas in a dry skillet or microwave to make them more pliable and easier to roll.
- Assemble the Wraps: Spread a generous layer of the Green Goddess dressing evenly over each warmed tortilla.
- Add Fillings: Arrange shredded or chopped chicken, baby spinach or mixed greens, thin cucumber slices, sliced avocado, shredded carrots, thinly sliced red onion, and optional crumbled feta cheese down the center of each tortilla.
- Roll the Wraps: Fold the sides of each tortilla inward over the filling, then tightly roll it up to enclose the ingredients completely.
- Serve: Slice each wrap in half diagonally and serve immediately for a fresh and delicious meal.
