Description
This Delicious Jasmine Rice with Coconut Milk is a light and fluffy side dish infused with rich coconut flavor, perfect for complementing curries, grilled meats, seafood, or tropical-inspired meals.
Ingredients
Rice and Liquids
- 1½ cups jasmine rice
- 1 cup canned coconut milk (full-fat preferred)
- 1 cup water
Seasonings and Garnish
- 1 tablespoon butter or coconut oil
- ½ teaspoon salt
- 1 teaspoon sugar (optional)
- Fresh cilantro or toasted coconut, for garnish
Instructions
- Rinse the Rice: Rinse the jasmine rice thoroughly under cold water until the water runs clear to remove excess starch for a fluffy texture.
- Combine Liquids and Seasonings: In a medium saucepan, combine the canned coconut milk, water, butter or coconut oil, salt, and optional sugar. Stir gently to mix.
- Bring to Boil: Place the saucepan over medium heat and bring the mixture to a gentle boil, ensuring the liquids are well combined and heated through.
- Add Rice and Simmer: Stir in the rinsed jasmine rice, reduce the heat to low, cover the saucepan tightly, and let it simmer gently for 15 minutes until the rice absorbs the liquid and becomes tender.
- Let Rice Rest: Remove the saucepan from the heat and let the rice stand, covered, for an additional 10 minutes to allow it to finish steaming and develop a light, fluffy texture.
- Fluff and Garnish: Fluff the rice gently with a fork to separate the grains. Garnish with fresh cilantro or toasted coconut before serving.
Notes
- Use full-fat coconut milk for the creamiest and richest texture.
