Ingredients
Tofu
- 14 oz (400 g) extra-firm tofu, pressed and crumbled
Sauce and Seasonings
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 2 tablespoons tomato paste
- ½ cup vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
Instructions
- Heat the oil: Warm the olive oil in a skillet over medium heat to prepare for sautéing the aromatics.
- Sauté onion and garlic: Add the chopped onion and cook until softened, then incorporate the minced garlic, cooking briefly until fragrant.
- Prepare the sauce: In a blender, combine chipotle peppers, adobo sauce, tomato paste, vegetable broth, cumin, smoked paprika, oregano, soy sauce, and lime juice. Blend until the sauce is smooth and evenly combined.
- Add tofu: Crumble the pressed tofu into the skillet with the sautéed onions and garlic.
- Combine tofu and sauce: Pour the blended sauce over the tofu in the skillet, stirring well to coat all the tofu pieces evenly.
- Simmer the sofritas: Let the mixture simmer for 15 to 20 minutes, allowing the liquid to reduce and flavors to meld together, stirring occasionally to prevent sticking.
- Serve: Use the sofritas as a flavorful filling in burritos, tacos, bowls, or salads and enjoy.
Notes
