Ingredients

Instructions

  1. Prepare the Rice: Rinse the rice thoroughly under cold water. Add the rinsed rice to a pot along with 6 cups of water or broth, then cook over medium heat, stirring occasionally until the rice breaks down and the mixture turns soft and creamy.
  2. Add Ginger and Chicken: Incorporate the sliced ginger and chicken pieces into the pot. Reduce heat and simmer gently until the chicken is nearly cooked through, about 15-20 minutes, stirring occasionally.
  3. Cook Seafood: Add the peeled shrimp and fish fillet pieces to the simmering congee. Continue cooking until the seafood is just done, which should take about 5-7 minutes. Be careful not to overcook to maintain tenderness.
  4. Season the Congee: Stir in the soy sauce and sesame oil. Season with salt and white pepper to taste, adjusting based on the type of broth used. Let the congee simmer briefly to meld the flavors together.
  5. Garnish and Serve: Remove from heat and ladle the congee into bowls. Garnish with freshly chopped green onions. Serve hot for a comforting and nourishing meal.
