Description

A soft and chewy mochi dessert filled with vibrant dragon fruit, offering a naturally sweet flavor and beautiful color. This colorful treat combines traditional Japanese glutinous rice flour with fresh dragon fruit puree to create a naturally flavored, visually stunning dessert that’s perfect for sharing.

Ingredients

For the mochi:

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 3/4 cup dragon fruit puree
  • Cornstarch or potato starch (for dusting)

For the filling (optional):

  • 1/2 cup whipped cream or sweetened cream cheese

Instructions

  1. Mix Ingredients: In a bowl, combine the glutinous rice flour, sugar, and dragon fruit puree. Stir until the mixture is smooth and free of lumps, ensuring an even consistency for the mochi dough.
  2. Microwave Cooking: Place the mixture in the microwave and cook on high for 1 minute. Remove and stir well to distribute heat evenly, then microwave again for an additional 1–2 minutes until the dough becomes thick and sticky.
  3. Prepare Surface: Generously dust a clean surface with cornstarch or potato starch to prevent sticking. Transfer the hot dough onto the dusted surface carefully.
  4. Cool and Portion: Allow the mochi dough to cool slightly so it is easier to handle. Once cooled, divide the dough into 6 equal portions.
  5. Shape and Fill: Flatten each portion with your hands or a rolling pin. If using filling, place a spoonful of whipped cream or sweetened cream cheese in the center of each flattened piece.
  6. Seal Mochi: Carefully wrap the mochi around the filling, pinching the edges to seal and shape into smooth balls.
  7. Final Dusting and Serve: Lightly dust the finished mochi with starch to prevent sticking. Serve immediately or store appropriately for best freshness.

Notes

  • Avoid overcooking the mochi to maintain a soft, chewy texture.
  • Best eaten fresh within 1–2 days for optimal texture and flavor.
  • Use cornstarch or potato starch liberally on surfaces to prevent sticking during shaping.
  • You can substitute the optional filling with other sweet fillings like red bean paste or fresh fruit to vary flavors.
