- 1/2 cup sour cream
- 2 tbsp prepared horseradish
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice

Instructions
- Preheat Oven: Preheat your oven to 220°C to prepare for roasting the beef tenderloin.
- Prepare Beef: Rub the beef tenderloin all over with olive oil, then season generously with salt and pepper to enhance the flavor.
- Roast Beef: Place the beef in the oven and roast for 25–35 minutes, or until it reaches your desired level of doneness. Use a meat thermometer for best accuracy.
- Rest Meat: Remove the beef from the oven and let it rest for 10 minutes. This allows the juices to redistribute, keeping the meat juicy and tender.
- Make Sauce: While the beef rests, mix together sour cream, prepared horseradish, Dijon mustard, lemon juice, salt, and pepper until smooth to create the creamy horseradish sauce.
- Serve: Slice the rested beef tenderloin and serve it alongside the creamy horseradish sauce for an elegant and flavorful meal.
