Description

This fresh spinach quiche combines tender spinach, creamy cheeses, eggs, and herbs in a flaky pie crust, creating a delicious vegetarian dish perfect for breakfast, brunch, or light dinner occasions.


Ingredients

Crust

  • 1 refrigerated pie crust

Egg Mixture

  • 5 large eggs
  • 1 cup whole milk
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste

Vegetables and Cheese Filling

  • 2 cups fresh spinach
  • 1/2 small onion, diced
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella
  • 1/2 cup crumbled feta


Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F) to prepare for baking the quiche.
  2. Prepare Pie Crust: Place the refrigerated pie crust into a pie dish. Gently press the crust against the sides and bottom of the dish to evenly line it.
  3. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Then add the fresh spinach and cook until wilted. Remove from heat and allow the mixture to cool slightly.
  4. Mix Egg Base: In a bowl, whisk together the 5 large eggs, whole milk, dried thyme, salt, and black pepper until well combined.
  5. Assemble Filling: Evenly spread the cooked spinach and onion mixture over the pie crust. Sprinkle the shredded mozzarella and crumbled feta cheeses over the vegetables.
  6. Add Egg Mixture: Pour the whisked egg mixture evenly over the cheese and vegetable layer inside the crust.
  7. Bake: Place the quiche in the preheated oven and bake for 35 to 40 minutes or until the center is completely set and a knife inserted comes out clean.
  8. Rest and Serve: Remove the quiche from the oven and let it rest for 10 minutes before slicing. Serve warm or chilled as desired.
