Ingredients
Shrimp and Marinade
- 700 g colossal shrimp, peeled and deveined
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
For Serving
- 2 tbsp fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture, which helps the marinade adhere better and ensures even cooking.
- Make the Marinade: In a bowl, whisk together olive oil, minced garlic, fresh lemon juice, lemon zest, smoked paprika, dried oregano, salt, and black pepper until well combined.
- Marinate: Add the shrimp to the marinade and toss until they are evenly coated. Let them marinate for 10–15 minutes to absorb the flavors.
- Preheat the Grill: Heat your grill to medium-high heat to prepare for cooking.
- Skewer the Shrimp (Optional): If desired, thread the shrimp onto skewers for easier handling and even grilling.
- Grill the Shrimp: Place the shrimp on the grill and cook for about 2–3 minutes on each side, until they turn opaque and are cooked through. Be careful to avoid overcooking to keep them juicy.
- Garnish and Serve: Remove the shrimp from the grill, sprinkle fresh chopped parsley over the top, and serve immediately with lemon wedges for squeezing.
Notes
- Avoid overcooking the shrimp, as colossal shrimp can become rubbery.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Add a pinch of chili flakes to the marinade for a spicy kick.
