Ingredients
Beef and Vegetables
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
Seasonings and Sauce
- 1 (14.5 oz) can diced tomatoes
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
Instructions
- Heat the olive oil: In a large skillet over medium heat, warm the olive oil to prepare for sautéing the vegetables and beef.
- Sauté the onion: Add the diced onion to the skillet and cook for 3–4 minutes until softened and translucent, which builds the flavor base.
- Add garlic: Stir in the minced garlic and cook for 30 seconds to release its aroma without burning.
- Cook the ground beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks to ensure even cooking.
- Add vegetables: Mix in the diced red bell pepper and zucchini, cooking for about 5 minutes until tender but still vibrant.
- Combine tomatoes and seasonings: Stir in the canned diced tomatoes, Italian seasoning, paprika, salt, and black pepper for a richly flavored mixture.
- Simmer: Reduce heat to low and simmer the mixture for 10 minutes to allow the flavors to meld together perfectly.
- Garnish and serve: Sprinkle chopped fresh parsley on top for brightness and serve the dish warm.
