Description

A budget-friendly and hearty casserole layering seasoned ground beef, sliced potatoes, creamy mushroom soup, and melted cheddar cheese. This Easy Hobo Casserole offers a comforting and straightforward meal perfect for family dinners and feeding a crowd without breaking the bank.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 4 medium potatoes, thinly sliced

Other Ingredients

  • 1 can cream of mushroom soup (10.5 oz)
  • ½ cup milk
  • 1½ cups shredded cheddar cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole.
  2. Cook Ground Beef and Onion: In a skillet over medium heat, brown the ground beef along with the diced onion. Season with salt, pepper, and garlic powder, stirring occasionally until the beef is fully cooked and onions are softened.
  3. Prepare Baking Dish: Grease a 9×13-inch baking dish lightly to prevent sticking and facilitate easy cleanup.
  4. Layer Potatoes: Arrange half of the thinly sliced potatoes evenly on the bottom of the baking dish, creating the first layer of the casserole.
  5. Add Beef Mixture: Spread the seasoned ground beef and onion mixture evenly atop the layer of potatoes.
  6. Top with Remaining Potatoes: Place the remaining sliced potatoes on top of the beef layer, covering it fully.
  7. Mix Soup and Milk: In a bowl, whisk together the cream of mushroom soup and milk until smooth, then pour this mixture evenly over the layered casserole.
  8. Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 60 minutes, allowing the potatoes to cook through and flavors to meld.
  9. Add Cheese and Continue Baking: After 60 minutes, remove the foil, sprinkle shredded cheddar cheese evenly on top, and bake uncovered for an additional 15 minutes until the cheese is melted and bubbly.
  10. Rest Before Serving: Remove the casserole from the oven and let it stand for 10 minutes. This allows it to set for easier serving and enhances the flavors.

Notes

  • Cream of chicken soup can be used as a substitute if preferred.
  • Slice the potatoes very thinly to ensure they cook evenly and thoroughly.
  • Incorporate mixed vegetables like peas or carrots for added nutrition and color.
