Instructions
- Prepare the meats: Cut the chicken and smoked sausage into bite-sized pieces, ensuring uniformity for even cooking.
- Brown the chicken: Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Add the chicken pieces and cook until lightly browned on all sides, about 5-7 minutes.
- Cook the sausage: Add the smoked sausage slices to the pot and cook for an additional 3-4 minutes until browned and fragrant.
- Sauté the vegetables: Stir in the diced onion, bell pepper, and celery. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
- Add garlic and spices: Mix in the minced garlic and cook for 1 minute until fragrant. Then stir in Cajun seasoning, paprika, dried thyme, salt, and black pepper, coating the ingredients evenly.
- Add tomatoes, broth, and rice: Pour in the diced tomatoes, chicken broth, and uncooked long-grain white rice. Stir well to combine all ingredients.
- Simmer the jambalaya: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer gently for about 25-30 minutes, or until the rice is tender and the liquid has been absorbed. Avoid stirring frequently to prevent the rice from becoming mushy.
- Rest and fluff: Remove the pot from heat and let the jambalaya rest, covered, for 5-10 minutes. Then gently fluff the rice with a fork to separate the grains.
