Instructions
- Season the Chicken: In a bowl, toss the diced chicken breasts with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper until evenly coated with the spices.
- Cook the Chicken: Heat a skillet over medium-high heat and add the seasoned chicken. Cook for 6 to 8 minutes, stirring occasionally, until the chicken is fully cooked through and nicely browned on the outside.
- Warm the Beans and Corn: While the chicken cooks, warm the drained black beans and corn kernels, either in a separate pan over low heat or briefly in the microwave until heated through.
- Assemble the Bowls: Divide the cooked rice evenly among four serving bowls. Top each bowl with the cooked chicken, warmed black beans, corn, halved cherry tomatoes, and diced avocado.
- Garnish and Serve: Sprinkle fresh cilantro over each bowl and serve with optional toppings such as lime wedges, sour cream, shredded cheese, and salsa according to your preference.
