Description
Tender boneless, skinless chicken breasts are seasoned with fragrant rosemary, garlic, lemon, and olive oil, then pan-seared in a skillet until golden and juicy. This simple and flavorful recipe is perfect for a quick and satisfying weeknight dinner with Mediterranean-inspired flavors.
Ingredients
Chicken and Marinade
- 600 g boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 tbsp butter
Instructions
- Prepare the chicken: Pat the chicken breasts dry with paper towels to remove excess moisture. Season both sides evenly with salt, black pepper, paprika, and chopped fresh rosemary to infuse bold flavors directly into the meat.
- Heat the skillet: Place a large skillet over medium-high heat and add 2 tablespoons of olive oil. Allow the oil to heat until shimmering but not smoking, which ensures a good sear on the chicken.
- Cook the chicken: Add the seasoned chicken breasts to the hot skillet. Cook undisturbed for 5 to 7 minutes per side, depending on the thickness, until each side is golden brown and the chicken easily releases from the pan.
- Add garlic and butter: In the last 1 to 2 minutes of cooking, add the minced garlic and butter to the skillet. Spoon the melted garlic butter mixture over the chicken repeatedly to enhance the flavor and keep the meat moist.
- Finish with lemon: Drizzle the chicken with fresh lemon juice and sprinkle lemon zest on top. Continue cooking just until the internal temperature of the chicken reaches 74°C (165°F) to ensure it is safe to eat.
- Rest the chicken: Remove the skillet from heat and let the chicken rest for 5 minutes. Resting helps the juices redistribute, keeping the chicken tender and juicy when sliced.
- Serve: Garnish with additional fresh rosemary if desired and serve warm alongside your favorite side dishes such as roasted potatoes, green beans, or a fresh salad.
Notes
- Pound thick chicken breasts to an even thickness to ensure even cooking and prevent drying out.
- Chicken thighs can be used instead of breasts for a juicier option with a slightly different flavor.
- Pair this dish with roasted vegetables, green beans, or a fresh, crisp salad to complete your meal.
