Description
This savory egg and kimchi quesadilla combines fluffy scrambled eggs, spicy fermented kimchi, melted cheese, and crispy tortillas for a quick and flavorful meal perfect for breakfast, lunch, or brunch.
Ingredients
Egg Mixture
- 4 large eggs
- Salt and black pepper, to taste
Quesadilla Filling
- 1/2 cup kimchi, chopped
- 1 cup shredded cheddar or Monterey Jack cheese
- 2 green onions, sliced
- 1 tbsp chopped cilantro (for garnish)
Cooking Fats
- 1 tbsp butter
- 1 tsp sesame oil
Other
- 4 flour or corn tortillas
Instructions
- Whisk eggs: Crack the eggs into a bowl, add a pinch of salt and black pepper, and whisk thoroughly until well combined and slightly frothy.
- Scramble eggs: Heat butter in a skillet over medium heat. Pour in the eggs and gently scramble them by stirring continuously until just set but still soft. Remove the eggs from the skillet and set aside.
- Cook kimchi: Add sesame oil to the same skillet and sauté the chopped kimchi for 2 to 3 minutes until heated through and fragrant.
- Assemble quesadilla: Place one tortilla in the skillet and sprinkle half of it with a layer of shredded cheese. Add a portion of scrambled eggs on top of the cheese, then spread some cooked kimchi and add sliced green onions. Sprinkle more cheese over the filling.
- Cook quesadilla: Fold the tortilla in half to cover the filling and press down gently. Cook for 2 to 3 minutes per side until the tortilla is golden brown and crispy and the cheese is melted.
- Repeat and serve: Repeat the assembly and cooking process with the remaining tortillas and filling ingredients. Slice each quesadilla into wedges and garnish with chopped cilantro before serving.
Notes
- Use mild kimchi if you prefer less heat.
- Consider adding avocado slices or a drizzle of spicy mayonnaise for extra flavor and creaminess.
- For a vegetarian version, ensure your kimchi does not contain fish sauce or shrimp paste.
