Ingredients
Ramen Base
- 2 packs ramen noodles
- 3 cups chicken or vegetable broth
- 1/2 cup milk
- 2 tbsp mayonnaise
- 1 tbsp butter
- 1 garlic clove, minced
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Toppings
- 1 cup corn kernels
- 1/4 cup crumbled cotija or feta cheese
- 2 tbsp chopped cilantro
- 1 lime
Instructions
- Char the corn: Heat a skillet over medium-high heat and add the corn kernels. Cook, stirring occasionally, until the corn is lightly charred and smoky, about 5-7 minutes. Remove from heat and set aside.
- Sauté garlic: In a pot, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add liquids and spices: Pour in the broth and milk, then stir in smoked paprika, chili powder, and cumin. Bring the mixture to a gentle simmer to allow the flavors to meld.
- Cook ramen noodles: Add the ramen noodles to the pot and cook according to the package instructions, usually 3-4 minutes, until tender.
- Create creamy broth: Stir in the mayonnaise until fully incorporated, which will thicken and enrich the broth, giving it a creamy texture.
- Season: Taste and season with salt and pepper as needed to balance the flavors.
- Assemble bowls: Divide the ramen and broth evenly between two bowls. Top each with the charred corn, crumbled cotija cheese, and chopped cilantro.
- Add final touch: Squeeze fresh lime juice over each bowl just before serving to add brightness and a zesty finish. Serve hot and enjoy!
Notes
- Use vegetable broth instead of chicken broth to make this ramen vegetarian.
- Sprinkle Tajín seasoning over the finished bowls for an extra authentic Mexican street corn flavor boost.
- Add sliced jalapeños if you prefer more heat and a spicier dish.
