Ingredients
Pasta
- 12 oz (340 g) spaghetti or linguine
Vegetables and Herbs
- 2 medium yellow summer squash, thinly sliced
- 4 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
Dairy and Fats
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1/2 cup grated Parmesan cheese
Liquids and Seasonings
- 1/2 cup reserved pasta water
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- Red pepper flakes, optional
Instructions
- Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Reserve 1/2 cup of the starchy pasta water before draining the pasta thoroughly.
- Sauté the Summer Squash: In a large skillet over medium heat, heat the olive oil and unsalted butter until melted and shimmering. Add the thinly sliced summer squash and cook for 4 to 5 minutes, stirring occasionally, until the squash becomes tender and lightly golden.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Take care not to burn the garlic as it will become bitter.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet with the squash and garlic. Pour in the reserved pasta water, then toss well to combine and loosen the pasta.
- Incorporate Cheese and Seasonings: Sprinkle in the grated Parmesan cheese, Italian seasoning, salt, and black pepper. Toss continuously until the cheese melts and forms a light, creamy sauce that coats the pasta evenly.
- Finish with Lemon and Garnish: Stir in fresh lemon juice for brightness. Garnish the pasta with chopped fresh parsley and sprinkle with red pepper flakes if desired for a little heat.
- Serve: Serve immediately with extra Parmesan cheese on the side for topping as preferred.
Notes
- Zucchini can be substituted for yellow summer squash if preferred.
- Add grilled chicken or shrimp to the dish for additional protein and a heartier meal.
- Use whole-wheat or gluten-free pasta to accommodate dietary preferences or restrictions.
- For added flavor and color, toss in halved cherry tomatoes along with the squash.
- Gradually add pasta water until the sauce achieves your desired consistency to avoid a too-thin or too-thick sauce.
