Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Reserve 1/2 cup of the starchy pasta water before draining the pasta thoroughly.
  2. Sauté the Summer Squash: In a large skillet over medium heat, heat the olive oil and unsalted butter until melted and shimmering. Add the thinly sliced summer squash and cook for 4 to 5 minutes, stirring occasionally, until the squash becomes tender and lightly golden.
  3. Add Garlic: Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Take care not to burn the garlic as it will become bitter.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the squash and garlic. Pour in the reserved pasta water, then toss well to combine and loosen the pasta.
  5. Incorporate Cheese and Seasonings: Sprinkle in the grated Parmesan cheese, Italian seasoning, salt, and black pepper. Toss continuously until the cheese melts and forms a light, creamy sauce that coats the pasta evenly.
  6. Finish with Lemon and Garnish: Stir in fresh lemon juice for brightness. Garnish the pasta with chopped fresh parsley and sprinkle with red pepper flakes if desired for a little heat.
