Description

A rich and comforting beef stroganoff featuring tender strips of beef, earthy mushrooms, and a creamy sauce served over egg noodles, perfect for a satisfying dinner.

Ingredients

Beef and Seasonings

  • 1½ lbs beef sirloin or tenderloin, thinly sliced
  • Salt and black pepper, to taste

Cooking Fats

  • 2 tbsp olive oil
  • 2 tbsp butter

Vegetables and Aromatics

  • 1 medium onion, finely sliced
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced

Sauces and Liquids

  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • ½ cup sour cream

Garnish and Serving

  • Fresh parsley, chopped, for garnish
  • 12 oz egg noodles, cooked

Instructions

  1. Season the Beef: Season the thinly sliced beef sirloin or tenderloin with salt and black pepper evenly to enhance its flavor before cooking.
  2. Sear the Beef: Heat 2 tablespoons of olive oil in a large skillet over high heat. Quickly sear the beef in batches to avoid overcrowding, then remove and set aside to prevent overcooking.
  3. Cook Onions and Mushrooms: Add 2 tablespoons of butter to the same skillet, then add the finely sliced onion and sliced cremini mushrooms. Cook them over medium heat until they soften and turn golden brown, developing rich, deep flavors.
  4. Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, taking care not to burn it.
  5. Build the Sauce: Stir in 1 tablespoon Dijon mustard, 1 tablespoon Worcestershire sauce, and 1 cup beef broth into the skillet. Let the mixture simmer gently for 5 minutes to blend the flavors and reduce slightly.
  6. Add Sour Cream: Reduce the heat to low and stir in ½ cup sour cream gradually, ensuring it is combined smoothly without curdling, to create a creamy sauce.
  7. Reheat the Beef: Return the seared beef strips to the skillet and cook for an additional 2 to 3 minutes until the beef is warmed through but still tender.
  8. Serve: Spoon the beef stroganoff over cooked egg noodles and garnish with freshly chopped parsley for a fresh, herbal finish.

Notes

  • Avoid overcooking the beef to keep it tender and juicy.
  • Sour cream should be added over low heat to prevent curdling of the sauce.
  • Use fresh parsley to add brightness and color to the finished dish.
  • Cook the egg noodles according to package instructions for best texture.
