This Green Goddess Chickpea Power Bowl is a vibrant, nutrient-packed meal combining crunchy vegetables, creamy avocado, protein-rich chickpeas, and fresh herbs, all topped with a zesty homemade Green Goddess dressing. Ingredients

Power Bowls

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 3 cups cooked quinoa or brown rice
  • 2 cups chopped romaine lettuce
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ½ cup shredded carrots
  • ¼ cup red onion, thinly sliced
  • ¼ cup pumpkin seeds or sunflower seeds
  • 2 tbsp fresh parsley, chopped

Green Goddess Dressing

  • ½ cup Greek yogurt
  • ¼ cup fresh parsley
  • ¼ cup fresh cilantro
  • 2 tbsp fresh basil
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 small garlic clove
  • 1 tsp honey or maple syrup
  • 2–3 tbsp water, as needed
  • ¼ tsp salt
  • ¼ tsp black pepper


Instructions

  1. Prepare the Dressing: Add Greek yogurt, parsley, cilantro, basil, lemon juice, olive oil, garlic, honey or maple syrup, salt, and black pepper to a blender. Blend until smooth, adding water one tablespoon at a time until the dressing reaches your preferred consistency.
  2. Assemble the Bowls: Divide the cooked quinoa or brown rice evenly among four bowls. Arrange the chickpeas, chopped romaine lettuce, diced cucumber, halved cherry tomatoes, diced avocado, shredded carrots, and thinly sliced red onion over the grains.
  3. Add Dressing and Toppings: Drizzle each bowl generously with the prepared Green Goddess dressing. Sprinkle pumpkin seeds and fresh parsley on top before serving for added texture and flavor.
