Ingredients
Chicken Skewers
- 1½ pounds boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Herby Ranch Dressing
- ½ cup Whole30-compliant mayonnaise
- 2 tablespoons unsweetened coconut milk
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 teaspoon chopped chives
- 1 clove garlic, minced
- Salt and black pepper, to taste
Salad
- 4 cups chopped romaine lettuce
- 1 cup cucumber, sliced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 1 avocado, sliced
Instructions
- Season the Chicken: Toss the cubed chicken breasts with olive oil, garlic powder, onion powder, paprika, dried oregano, salt, and black pepper until evenly coated to ensure a flavorful marinade.
- Skewer the Chicken: Thread the seasoned chicken pieces onto skewers evenly, making sure not to overcrowd for even cooking.
- Grill the Skewers: Preheat the grill to medium-high heat. Grill the chicken skewers for 10–12 minutes total, turning occasionally to cook evenly on all sides until the chicken reaches an internal temperature of 165°F and is fully cooked through.
- Prepare the Dressing: In a bowl, whisk together Whole30-compliant mayonnaise, unsweetened coconut milk, lemon juice, chopped parsley, dill, chives, minced garlic, salt, and black pepper until smooth and creamy.
- Assemble the Salad: In a large bowl, combine chopped romaine lettuce, sliced cucumber, halved cherry tomatoes, thinly sliced red onion, and sliced avocado.
- Toss the Salad: Drizzle the herby ranch dressing over the salad and toss gently to combine all ingredients evenly.
- Serve: Place the grilled chicken skewers on top of the dressed salad and enjoy immediately for a fresh, protein-packed meal.
Notes
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
- The herby ranch dressing can be made a day ahead and stored in the refrigerator for convenience.
- This recipe is excellent for meal prepping and will stay fresh for up to 3 days if kept separate from the salad dressing.
