Description

These Halloumi Skewers are a colorful and flavorful vegetarian dish featuring golden grilled halloumi cheese paired with fresh vegetables. They’re perfect for barbecues, appetizers, or a light summer meal.

Ingredients

Cheese

  • 8 ounces halloumi cheese, cut into cubes

Vegetables

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1 small red onion, cut into wedges

Seasoning & Others

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Wooden or metal skewers

Instructions

  1. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent them from burning during grilling.
  2. Assemble Skewers: Thread the halloumi cubes, red and yellow bell pepper chunks, zucchini slices, and red onion wedges alternately onto the skewers to create a colorful assortment.
  3. Season: Brush the skewers with olive oil. Then sprinkle dried oregano, paprika, salt, and black pepper evenly over the skewers for robust flavor.
  4. Grill: Preheat your grill to medium heat. Place the skewers on the grill and cook for 8 to 10 minutes, turning occasionally, until the vegetables become tender and the halloumi develops a golden crust.
  5. Serve: Remove the skewers from the grill and serve immediately, optionally with lemon wedges to add a fresh, tangy note.

Notes

  • Add cherry tomatoes or mushrooms for variety and additional flavors.
  • Halloumi is naturally salty, so season lightly to avoid over-salting.
  • Delicious served alongside tzatziki sauce or warm pita bread for a more substantial appetizer.
