Description

These Halloumi Skewers are a colorful and flavorful vegetarian dish featuring golden grilled halloumi cheese paired with fresh vegetables. Ideal for barbecues, appetizers, or a light summer meal, these skewers combine the salty, rich taste of halloumi with the sweetness of peppers and the freshness of zucchini and red onion.

Ingredients

Cheese

  • 8 ounces halloumi cheese, cut into cubes

Vegetables

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1 small red onion, cut into wedges

Seasoning & Oil

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper, to taste

Other

  • Wooden or metal skewers

Instructions

  1. Soak Skewers: If you are using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning during grilling.
  2. Prepare Skewers: Thread the halloumi cheese cubes alternately with chunks of red bell pepper, yellow bell pepper, zucchini slices, and red onion wedges onto the skewers, ensuring even distribution for balanced grilling.
  3. Season Skewers: Brush the assembled skewers evenly with olive oil. Sprinkle dried oregano, paprika, salt, and black pepper over the skewers to enhance the flavor profile.
  4. Grill: Place the skewers on a preheated grill set to medium heat. Grill each side for 8 to 10 minutes, turning occasionally to achieve a golden crust on the halloumi and to tenderize the vegetables without charring.
  5. Serve: Remove from the grill and serve immediately, optionally with fresh lemon wedges to add a zesty finish.

Notes

  • Add cherry tomatoes or mushrooms to the skewers for additional flavor and variety.
  • Since halloumi is naturally salty, season the skewers lightly with salt to avoid over-salting.
  • These skewers pair wonderfully with tzatziki sauce or pita bread for a more substantial meal.
