Ingredients
Chicken and Marinade
- 1 1/2 lbs (680 g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Wooden or metal skewers
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Prepare Marinade: In a large bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper until well combined.
- Marinate Chicken: Add the chicken cubes to the marinade and toss until evenly coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to infuse.
- Thread Chicken on Skewers: Carefully thread the marinated chicken pieces onto the soaked or metal skewers, ensuring they are evenly spaced for uniform cooking.
- Preheat Grill: Heat the grill to medium-high heat, ensuring it’s ready for cooking the skewers.
- Grill the Skewers: Place the chicken skewers on the grill and cook for 4–5 minutes per side. Turn occasionally to achieve even grilling and a light char, and cook until the chicken is fully cooked through (internal temperature of 165°F / 74°C).
- Rest and Garnish: Remove the skewers from the grill and let them rest for a few minutes to retain juices. Garnish with chopped fresh parsley and serve immediately with lemon wedges for extra brightness.
Notes
- Chicken thighs can be substituted for chicken breasts for a juicier result.
- For variety and added flavor, include vegetables such as bell peppers, zucchini, or red onion on the skewers.
- Marinating the chicken for up to 8 hours enhances the flavor intensity.
- Serve these skewers alongside rice, a fresh salad, pita bread, or traditional tzatziki sauce for a complete meal.
