Description

These Grilled Lemon Herb Chicken Skewers feature tender, juicy chicken pieces marinated in fresh lemon juice, garlic, and a blend of Mediterranean herbs. Perfectly charred on the grill, they offer a flavorful and healthy option ideal for summer cookouts, family dinners, or backyard barbecues.

Ingredients

Chicken and Marinade

  • 1 1/2 lbs (680 g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • Wooden or metal skewers

Instructions

  1. Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
  2. Prepare Marinade: In a large bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper until well combined.
  3. Marinate Chicken: Add the chicken cubes to the marinade and toss until evenly coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to infuse.
  4. Thread Chicken on Skewers: Carefully thread the marinated chicken pieces onto the soaked or metal skewers, ensuring they are evenly spaced for uniform cooking.
  5. Preheat Grill: Heat the grill to medium-high heat, ensuring it’s ready for cooking the skewers.
  6. Grill the Skewers: Place the chicken skewers on the grill and cook for 4–5 minutes per side. Turn occasionally to achieve even grilling and a light char, and cook until the chicken is fully cooked through (internal temperature of 165°F / 74°C).
  7. Rest and Garnish: Remove the skewers from the grill and let them rest for a few minutes to retain juices. Garnish with chopped fresh parsley and serve immediately with lemon wedges for extra brightness.

Notes

  • Chicken thighs can be substituted for chicken breasts for a juicier result.
  • For variety and added flavor, include vegetables such as bell peppers, zucchini, or red onion on the skewers.
  • Marinating the chicken for up to 8 hours enhances the flavor intensity.
  • Serve these skewers alongside rice, a fresh salad, pita bread, or traditional tzatziki sauce for a complete meal.
