Ingredients
For the Chicken:
- 2 chicken breasts
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
For the Salad:
- 5 cups mixed greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes
- ½ red onion, thinly sliced
- ½ cup feta cheese, crumbled
- ¼ cup olives
For Serving:
- Additional olive oil and lemon juice for drizzling
Instructions
- Marinate the Chicken: In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts and coat evenly. Cover and let marinate for 20 minutes to absorb the flavors.
- Grill the Chicken: Preheat a grill or grill pan to medium-high heat. Grill the marinated chicken breasts for 6–7 minutes on each side until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the grill and let the chicken rest for a few minutes.
- Prepare the Salad Base: While the chicken is resting, toss the mixed greens, sliced cucumber, cherry tomatoes, and red onion together in a large salad bowl.
- Slice the Chicken: Slice the rested chicken breasts into strips.
- Assemble the Salad: Top the tossed vegetables with sliced grilled chicken, crumbled feta cheese, and olives.
- Dress and Serve: Drizzle additional olive oil and lemon juice over the salad just before serving for a bright and fresh finish.
