Description

This Grilled Lemon Herb Mediterranean Chicken Salad features juicy, marinated grilled chicken breasts served over a bed of crisp mixed greens, cucumber, cherry tomatoes, and red onion. Topped with salty feta cheese and olives, and finished with a bright lemon herb dressing, this fresh and flavorful salad offers a healthy, protein-packed meal with vibrant Mediterranean flavors.

Ingredients

For the Chicken:

  • 2 chicken breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste

For the Salad:

  • 5 cups mixed greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes
  • ½ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup olives

For Serving:

  • Additional olive oil and lemon juice for drizzling

Instructions

  1. Marinate the Chicken: In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts and coat evenly. Cover and let marinate for 20 minutes to absorb the flavors.
  2. Grill the Chicken: Preheat a grill or grill pan to medium-high heat. Grill the marinated chicken breasts for 6–7 minutes on each side until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the grill and let the chicken rest for a few minutes.
  3. Prepare the Salad Base: While the chicken is resting, toss the mixed greens, sliced cucumber, cherry tomatoes, and red onion together in a large salad bowl.
  4. Slice the Chicken: Slice the rested chicken breasts into strips.
  5. Assemble the Salad: Top the tossed vegetables with sliced grilled chicken, crumbled feta cheese, and olives.
  6. Dress and Serve: Drizzle additional olive oil and lemon juice over the salad just before serving for a bright and fresh finish.

Notes

  • For a heartier meal, add cooked quinoa or your favorite grain to the salad.
  • If meal prepping, store the dressing separately to keep the salad fresh and crisp.
  • You can substitute chicken breasts with boneless skinless thighs if preferred.
  • This salad is naturally gluten-free and high in protein, making it a balanced meal option.
