Description

This Grilled Peach Salad combines sweet caramelized peaches, crisp mixed greens, creamy goat or feta cheese, toasted nuts, and a tangy balsamic vinaigrette. It’s a refreshing, elegant summer salad that’s quick and easy to make, perfect as a light lunch or side dish.


Ingredients

Salad

  • 3 ripe peaches, halved and pitted
  • 1 tbsp olive oil
  • 5 cups mixed greens
  • 1/3 cup crumbled goat cheese or feta cheese
  • 1/4 cup toasted pecans or walnuts
  • 1/4 small red onion, thinly sliced

Dressing

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper to taste


Instructions

  1. Preheat Grill: Preheat your grill to medium heat to prepare for cooking the peaches.
  2. Prepare Peaches: Lightly brush the halved and pitted peaches with olive oil to prevent sticking and enhance caramelization during grilling.
  3. Grill Peaches: Place the peaches cut side down on the grill and cook for 2–3 minutes until distinct grill marks appear. Flip and grill an additional 2–3 minutes on the other side until softened and caramelized.
  4. Slice Peaches: Remove the peaches from the grill and allow them to cool slightly before slicing them for the salad.
  5. Assemble Salad Base: Arrange the mixed greens evenly on a large serving platter or individual plates as the salad foundation.
  6. Add Toppings: Top the greens with sliced grilled peaches, crumbled goat or feta cheese, toasted pecans or walnuts, and thinly sliced red onion.
  7. Make Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper until emulsified.
  8. Dress Salad: Drizzle the vinaigrette evenly over the salad just before serving to maintain freshness and texture.
