Ingredients
Shrimp and Marinade
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and black pepper, to taste
- 1/2 cup fresh lime juice
- 1/4 cup fresh lemon juice
Vegetables and Herbs
- 1 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/3 cup finely diced red onion
- 1 jalapeño, finely diced
- 1/2 cup chopped fresh cilantro
- 1 avocado, diced
- 1 tablespoon chopped fresh mint, optional
Instructions
- Season the shrimp: Toss the peeled and deveined shrimp with olive oil, chili powder, ground cumin, salt, and black pepper until evenly coated to infuse flavor.
- Prepare the grill: Preheat a grill or grill pan over medium-high heat to ensure a nice char on the shrimp without overcooking.
- Grill the shrimp: Place the shrimp on the hot grill and cook for about 2 to 3 minutes per side, until they turn opaque and are cooked through. Remove from heat and let them cool slightly.
- Chop the shrimp: Once slightly cooled, chop the grilled shrimp into bite-sized pieces for easier mixing and serving.
- Marinate the shrimp: Transfer the chopped shrimp to a large bowl and add fresh lime juice and lemon juice. Let the shrimp marinate for 5 to 10 minutes to meld the flavors.
- Add vegetables and herbs: To the marinated shrimp, add diced tomatoes, cucumber, finely diced red onion, jalapeño, and chopped cilantro. Gently toss everything together to combine evenly.
- Fold in avocado: Just before serving, carefully fold in the diced avocado to maintain its texture and creaminess.
- Season to taste: Taste the ceviche and adjust the seasoning by adding more lime juice, salt, or pepper if desired.
- Serve: Serve the grilled shrimp ceviche chilled alongside tortilla chips, tostadas, or lettuce cups for a vibrant and refreshing appetizer or light meal.
Notes
- Do not overcook the shrimp, as it can become rubbery and lose its tender texture.
- For extra heat, leave some jalapeño seeds intact or substitute with serrano pepper.
- Prepare the ceviche shortly before serving to enjoy the freshest texture and flavors.
- Add diced mango or pineapple to introduce a sweet tropical twist to the ceviche.
