Description

These grilled vegetables are colorful, smoky, and perfectly tender with a simple herb seasoning. They’re an easy, healthy side dish perfect for barbecues, weeknight dinners, or meal prep, bringing a vibrant Mediterranean flavor to your table.

Ingredients

Vegetables

  • 2 zucchini, sliced lengthwise
  • 2 yellow squash, sliced lengthwise
  • 2 bell peppers (any color), cut into large strips
  • 1 red onion, cut into thick wedges
  • 8 oz (225 g) mushrooms

Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Garnishes

  • 1 tablespoon chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat, approximately 400°F (200°C), to ensure the vegetables cook evenly with a nice char.
  2. Prepare Vegetables: Wash all vegetables thoroughly and cut them into large, even-sized pieces to promote uniform grilling and prevent some pieces from overcooking while others remain undercooked.
  3. Season Vegetables: In a large bowl, toss the zucchini, yellow squash, bell peppers, red onion, and mushrooms with olive oil, garlic powder, Italian seasoning, salt, and black pepper until all pieces are evenly coated, infusing them with flavor.
  4. Grill Vegetables: Place the vegetables directly on the grill grates or use a grill basket for smaller pieces like mushrooms. Grill for 8 to 12 minutes, turning occasionally to achieve tender texture and smoky char marks on all sides.
  5. Serve: Remove the grilled vegetables from the heat and transfer them to a serving platter. Garnish with chopped fresh parsley and serve with lemon wedges if desired for a zesty finish.

Notes

  • Cut vegetables into similar sizes to ensure even cooking and consistent texture.
  • Use a grill basket when grilling smaller or delicate vegetables, such as mushrooms, to prevent them from falling through the grates.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, making this a great option for meal prep.
  • These grilled vegetables pair wonderfully with grilled chicken, steak, fish, or can be tossed into pasta or fresh salads for added flavor and nutrition.
