Description

This Grilled Zucchini Caprese Sandwich features tender grilled zucchini, creamy fresh mozzarella, ripe tomatoes, and aromatic basil leaves, all layered on crusty ciabatta rolls and finished with a sweet balsamic glaze. It’s a delicious Italian-inspired sandwich that’s perfect for a light lunch or easy dinner.

Ingredients

Vegetables

  • 2 medium zucchini, sliced lengthwise
  • 2 large tomatoes, sliced
  • 1/2 cup fresh basil leaves

Dairy

  • 200 g fresh mozzarella, sliced

Others

  • 4 ciabatta rolls or crusty sandwich rolls
  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. Preheat the Grill: Preheat your grill or grill pan to medium-high heat to ensure it’s hot enough to properly char the zucchini slices and toast the rolls.
  2. Prepare Zucchini: In a bowl, toss the zucchini slices with olive oil, minced garlic, salt, and black pepper until evenly coated.
  3. Grill Zucchini: Place the zucchini slices on the grill and cook for about 2–3 minutes per side until tender and lightly charred, giving them a smoky, flavorful taste.
  4. Toast Rolls: Slice each ciabatta roll in half horizontally and lightly toast the cut sides on the grill until warm and slightly crispy.
  5. Assemble Sandwiches: On the bottom half of each toasted roll, layer slices of fresh mozzarella, grilled zucchini, fresh tomato slices, and fresh basil leaves to build the sandwich.
  6. Add Balsamic Glaze: Drizzle each sandwich with balsamic glaze for a touch of sweetness and acidity that complements the fresh ingredients.
  7. Serve: Close the sandwich with the top roll half and serve immediately while warm or at room temperature for the best flavor and texture.

Notes

  • Add pesto to the sandwich for an additional layer of Italian flavor.
  • Try using grilled eggplant or bell peppers as extra vegetables for variety and added nutrients.
  • For optimal texture and taste, enjoy the sandwich soon after assembling to prevent the bread from becoming soggy.
