Description

Harvest Harmony Beef & Sweet Potato Stew is a hearty and nourishing one-pot meal featuring tender beef cubes, sweet potatoes, and an assortment of seasonal vegetables simmered in a flavorful beef broth. This comforting stew is perfect for cozy fall dinners and makes excellent leftovers for meal prep.


Ingredients

Meat and Oil

  • 2 lbs beef stew meat, cubed
  • 2 tbsp olive oil

Vegetables

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 parsnip, chopped (optional)

Liquids and Seasonings

  • 4 cups beef broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper, to taste

Garnish

  • Fresh parsley, for garnish


Instructions

  1. Heat oil and brown beef: Warm olive oil in a large Dutch oven or pot over medium-high heat. Add the cubed beef and brown on all sides for even color and flavor, then remove the beef and set aside.
  2. Sauté vegetables: Add chopped onion, carrots, celery, and parsnip (if using) to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables soften.
  3. Add garlic and herbs: Stir in minced garlic, dried thyme, dried rosemary, and tomato paste. Cook for 1 minute until fragrant to build depth of flavor.
  4. Combine ingredients: Return the browned beef to the pot. Add diced sweet potatoes, diced tomatoes, beef broth, and bay leaves. Stir everything well to combine.
  5. Simmer the stew: Bring the mixture to a boil, then reduce heat to low. Cover the pot and let it simmer gently for 1½ to 2 hours, or until the beef is tender and the flavors meld beautifully.
  6. Finish and serve: Remove and discard the bay leaves. Season the stew with salt and black pepper to taste. Garnish with freshly chopped parsley before serving.

Notes

  • For a thicker stew, mash a few chunks of sweet potato directly into the broth before serving.
  • This recipe can easily be adapted for slow cooker use: Cook on low for 7–8 hours or on high for 4–5 hours.
  • Leftovers store well in the refrigerator for up to 4 days or can be frozen for up to 3 months.
