Ingredients
Pistachio Ice Cream Filling
- 2 cups plain Greek yogurt
- ½ cup shelled unsalted pistachios

- Pinch of salt
Chocolate Coating
- 1½ cups dark chocolate chips
- 2 tablespoons coconut oil
- ¼ cup finely chopped pistachios
Instructions
- Prepare the Ice Cream Filling: Blend the Greek yogurt, pistachios, honey, vanilla extract, almond extract (if using), and a pinch of salt in a blender or food processor until the mixture is smooth and creamy.
- Fill the Molds: Pour the blended mixture evenly into ice cream bar molds, then insert popsicle sticks into each mold.
- Freeze the Bars: Place the molds in the freezer and freeze for at least 6 hours or overnight to allow the bars to set firmly.
- Melt the Chocolate Coating: Gently melt the dark chocolate chips and coconut oil together in a microwave-safe bowl or using a double boiler until smooth and well combined.
- Add Pistachios to Chocolate: Stir the finely chopped pistachios into the melted chocolate coating for crunch and flavor.
- Dip the Frozen Bars: Remove the frozen bars from the molds carefully, then quickly dip each bar into the chocolate coating, ensuring it is fully covered.
- Harden the Coating: Place the chocolate-coated bars on a parchment-lined tray and return them to the freezer for about 10 minutes until the chocolate hardens.
