Ingredients
For the Bowl:

- ½ cup shelled edamame
- ¼ cup green onions, sliced
- 2 tbsp sesame seeds
- 1 sheet nori, cut into thin strips
For the Poke Sauce:
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp grated fresh ginger
- 1 tsp sriracha, optional
- 1 tsp lime juice
For Serving:
- Spicy mayo
- Pickled ginger
- Extra sliced green onions
- Furikake seasoning, optional
Instructions
- Cook the rice: Prepare the sushi or short-grain rice according to the package directions, then allow it to cool slightly so it’s not too hot when assembling the bowls.
- Make the poke sauce: In a bowl, whisk together the low-sodium soy sauce, sesame oil, rice vinegar, honey, grated fresh ginger, sriracha (if using), and lime juice until well combined.
- Marinate the tuna: Add the cubed sushi-grade ahi tuna to the poke sauce and gently toss to coat the fish evenly. Refrigerate the mixture for 10 to 15 minutes to let the flavors meld.
- Assemble the bowls: Divide the cooked rice evenly among four serving bowls. Arrange the marinated tuna, sliced avocado, thinly sliced cucumber, shredded carrots, shelled edamame, and sliced green onions over the rice uniformly.
- Add toppings: Sprinkle each bowl with toasted sesame seeds and thin strips of nori for flavor and texture.
