Description

Caprese Orzo Salad is a vibrant Italian-inspired pasta salad featuring tender orzo combined with juicy cherry tomatoes, fresh mozzarella pearls, and aromatic basil, all tossed in a simple balsamic vinaigrette. This refreshing and easy-to-make salad is ideal for summer gatherings, picnics, barbecues, or as a light and flavorful side dish.

Ingredients

Pasta

  • 8 ounces orzo pasta

Vegetables & Cheese

  • 1½ cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella pearls
  • ¼ cup fresh basil, chopped

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Optional

  • Balsamic glaze, for serving

Instructions

  1. Cook the Orzo: Bring a pot of salted water to a boil and cook the orzo pasta according to the package instructions until al dente, usually about 8-10 minutes.
  2. Drain and Cool: Drain the cooked orzo and rinse it under cold water to stop the cooking process and cool the pasta for the salad.
  3. Combine Salad Ingredients: In a large mixing bowl, add the cooled orzo, halved cherry tomatoes, fresh mozzarella pearls, and chopped fresh basil.
  4. Prepare the Dressing: In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, Dijon mustard, salt, and freshly ground black pepper until well emulsified.
  5. Toss the Salad: Pour the dressing over the orzo mixture and gently toss to combine all ingredients evenly without breaking the mozzarella pearls.
  6. Chill: Cover the salad and refrigerate for at least 20 minutes to allow the flavors to meld and chill the dish.
  7. Serve: Before serving, optionally drizzle with balsamic glaze for an extra touch of sweetness and presentation.
