Description

This homemade chicken lo mein offers a delightful blend of tender sliced chicken, chewy lo mein noodles, and crisp fresh vegetables all tossed in a savory and slightly sweet homemade sauce. Perfect for a quick yet flavorful dinner, this recipe mimics the classic restaurant-style lo mein with easy-to-follow stir-fry techniques.

Ingredients

Chicken and Noodles

  • 500 g boneless, skinless chicken breast, thinly sliced
  • 300 g lo mein or egg noodles

Vegetables

  • 1 red bell pepper, sliced
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 3 green onions, sliced

Cooking & Aromatics

  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated

Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1/2 tsp black pepper

Instructions

  1. Prepare the noodles: Cook the lo mein or egg noodles according to the package instructions until al dente. Drain them well and set aside to prevent sticking.
  2. Make the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, rice vinegar, honey, and black pepper until fully combined and smooth.
  3. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the thinly sliced chicken breast and stir-fry for 4 to 5 minutes until the chicken is cooked through and no longer pink inside. Remove the chicken from the pan and set aside.
  4. Sauté aromatics and vegetables: Add the remaining 1 tablespoon of vegetable oil to the same pan. Toss in the minced garlic and grated ginger and sauté briefly until fragrant. Add the sliced red bell pepper, shredded cabbage, julienned carrot, and broccoli florets. Stir-fry the vegetables for 3 to 4 minutes until they are crisp-tender.
  5. Combine chicken and noodles: Return the cooked chicken to the pan with the vegetables. Add the cooked noodles and pour the prepared sauce over everything.
  6. Toss and heat through: Stir-fry and toss all ingredients together over high heat for 2 to 3 minutes to ensure the sauce evenly coats the chicken, vegetables, and noodles, and everything is heated through.
  7. Garnish and serve: Remove from heat and garnish with sliced green onions. Serve immediately while hot for the best flavor and texture.

Notes

  • If lo mein noodles are unavailable, substitute with spaghetti or ramen noodles.
  • To add variety, include vegetables like mushrooms, snow peas, or bok choy for added texture and nutrition.
  • You can swap chicken breast with chicken thighs for a juicier, more flavorful result.
