Description

A fresh and tangy Mediterranean salad featuring crisp romaine lettuce, ripe tomatoes, cucumber, red onion, green bell pepper, Kalamata olives, feta cheese, and fresh parsley, all tossed with a simple homemade oregano-lemon dressing made from olive oil, red wine vinegar, lemon juice, and seasonings. Perfect as a light lunch or a flavorful side dish.

Ingredients

For the Greek Salad

  • 4 cups chopped romaine lettuce
  • 2 tomatoes, chopped
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/2 green bell pepper, sliced
  • 2 tbsp fresh parsley

For the Dressing

  • 1/3 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1 garlic clove, minced
  • 1/2 tsp honey
  • Salt and black pepper to taste

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, fresh lemon juice, Dijon mustard, dried oregano, minced garlic, honey, salt, and black pepper until the ingredients are well emulsified and the dressing is smooth.
  2. Assemble the Salad: In a large salad bowl, combine the chopped romaine lettuce, chopped tomatoes, sliced cucumber, thinly sliced red onion, sliced green bell pepper, Kalamata olives, crumbled feta cheese, and fresh parsley. Mix gently to combine all the vegetables evenly.
  3. Add the Dressing: Pour the prepared Mediterranean dressing evenly over the salad ingredients in the bowl.
  4. Toss the Salad: Gently toss the salad with salad tongs or two large spoons until every piece is lightly coated with the dressing.
  5. Let it Rest: Allow the salad to sit for about 5 minutes before serving to let the flavors marinate and meld together, enhancing the taste.

Notes

  • Make the dressing up to 5 days in advance and refrigerate it in an airtight container.
  • For added texture and protein, add diced avocado or cooked chickpeas.
  • To create a traditional Greek salad, omit the romaine lettuce and simply combine the other salad ingredients.
  • Use fresh herbs when possible to enhance the dressing’s flavor.
