Chicken

  • ½ teaspoon salt

Honey Mustard Sauce

  • ⅓ cup honey
  • ¼ cup Dijon mustard
  • 1 tablespoon whole grain mustard (optional)
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • salt and black pepper to taste

Garnish

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the honey mustard sauce: In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, minced garlic, lemon juice, paprika, dried thyme, salt, and black pepper until smooth and well combined.
  2. Season the chicken: Pat the chicken breasts dry with paper towels and season both sides lightly with salt and pepper.
  3. Heat the skillet: Place a large skillet over medium-high heat and add the olive oil. Allow the oil to heat until shimmering but not smoking.
  4. Cook the chicken breasts: Add the seasoned chicken breasts to the skillet and cook for 5 to 6 minutes on one side until golden brown.
  5. Flip and add sauce: Flip the chicken breasts over and reduce heat to medium. Pour the prepared honey mustard sauce evenly over the chicken.
  6. Simmer the chicken: Let the chicken simmer in the sauce for 5 to 8 minutes, spooning the sauce over the chicken occasionally. Continue cooking until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
