Description

Tender shredded buffalo chicken is made quickly in the Instant Pot and wrapped with crisp lettuce, cheese, and creamy ranch dressing for an easy weeknight meal.

Ingredients

Chicken and Sauce

  • 700 g boneless, skinless chicken breasts
  • 1 cup buffalo sauce
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste

Wrap Assembly

  • 8 flour tortillas
  • 2 cups shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 2 green onions, sliced

Instructions

  1. Prepare the Instant Pot: Place the chicken breasts in the Instant Pot and add buffalo sauce, chicken broth, garlic powder, smoked paprika, salt, and pepper, ensuring the chicken is evenly coated.
  2. Cook the chicken: Secure the lid of the Instant Pot and set it to cook on High Pressure for 12 minutes to cook the chicken thoroughly and infuse it with flavors.
  3. Release pressure: After cooking, allow a 5-minute natural pressure release, then carefully manually release any remaining pressure to safely open the lid.
  4. Shred the chicken: Remove the cooked chicken from the Instant Pot and shred it using two forks until tender and pulled apart.
  5. Toss shredded chicken with sauce: Return the shredded chicken to the Instant Pot and mix it well with the remaining buffalo sauce for maximum flavor.
  6. Warm the tortillas: Briefly warm the flour tortillas in a dry pan or microwave to make them pliable for wrapping.
  7. Assemble the wraps: Lay each tortilla flat and layer with shredded lettuce, buffalo chicken, shredded cheddar cheese, ranch dressing, and sliced green onions.
  8. Wrap it up: Fold in the sides of the tortilla and roll it tightly to form a neat wrap ready to serve.
  9. Serve: Serve immediately for the best taste and texture.

Notes

  • Use Greek yogurt ranch dressing for a lighter, healthier alternative.
  • Add diced celery or carrots inside the wrap for extra crunch and freshness.
  • Adjust the amount of buffalo sauce to reduce heat and make the wraps milder.
  • For meal prepping, store the shredded chicken and toppings separately, assembling wraps just before eating to maintain freshness.
