Instructions
- Heat oil and brown beef: In a large pot over medium heat, heat 2 tablespoons of olive oil. Add the beef cubes and brown them on all sides to develop flavor and seal in juices.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the pot and cook until fragrant and softened, about 3-4 minutes, stirring occasionally.
- Add vegetables and liquids: Stir in sliced carrots, diced potatoes, beef broth, tomato paste, dried thyme, salt, and black pepper. Mix well to combine all ingredients evenly.
- Simmer the stew: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for 60 to 75 minutes until the beef is very tender and the flavors meld together.
- Thicken the stew (optional): If you prefer a thicker stew, mix 1 tablespoon of flour with a little water to create a slurry. Stir this slurry into the stew during the last 5 minutes of cooking and allow it to thicken.
