Description

Irish Beef Stew is a classic hearty and comforting dish featuring tender chunks of beef chuck simmered slowly with potatoes, carrots, onions, and a flavorful broth enriched with tomato paste and herbs. Perfect for warming up on a cold day, this stew delivers rich, savory flavors in every bite.

Ingredients

Meat and Vegetables

  • 1 1/2 pounds beef chuck, cut into cubes
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced

Liquids and Seasonings

  • 2 tablespoons olive oil
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon flour (optional for thickening)

Instructions

  1. Heat oil and brown beef: In a large pot over medium heat, heat 2 tablespoons of olive oil. Add the beef cubes and brown them on all sides to develop flavor and seal in juices.
  2. Sauté onion and garlic: Add the chopped onion and minced garlic to the pot and cook until fragrant and softened, about 3-4 minutes, stirring occasionally.
  3. Add vegetables and liquids: Stir in sliced carrots, diced potatoes, beef broth, tomato paste, dried thyme, salt, and black pepper. Mix well to combine all ingredients evenly.
  4. Simmer the stew: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for 60 to 75 minutes until the beef is very tender and the flavors meld together.
  5. Thicken the stew (optional): If you prefer a thicker stew, mix 1 tablespoon of flour with a little water to create a slurry. Stir this slurry into the stew during the last 5 minutes of cooking and allow it to thicken.
  6. Serve hot: Once thickened and fully cooked, ladle the Irish Beef Stew into bowls and serve immediately for a comforting meal.

Notes

  • This stew tastes even better the next day as the flavors continue to develop.
  • You can use other root vegetables like parsnips or turnips for variation.
  • For a gluten-free version, omit the flour or use a gluten-free thickener.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
