Description
A creamy, cheesy chicken dish inspired by jalapeño poppers, packed with bold flavor and a slight spicy kick. This easy stovetop recipe combines tender chicken breasts with a rich, spicy cheese sauce and crispy bacon bits for a perfect weeknight dinner.
Ingredients
Chicken
- 2 chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
Sauce & Toppings
- 3 jalapeños, sliced
- 3 cloves garlic, minced
- 150 g cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup chicken broth
- 1/2 tsp paprika
- 1/4 cup cooked bacon bits
- Fresh parsley for garnish
Instructions
- Season Chicken: Pat the chicken breasts dry and season both sides generously with salt and pepper to enhance the flavor.
- Cook Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown and cooked through, approximately 6–7 minutes per side depending on thickness. Remove the chicken from the skillet and set aside.
- Sauté Jalapeños and Garlic: In the same skillet, add sliced jalapeños and minced garlic. Sauté for 2–3 minutes until fragrant and slightly softened, stirring frequently to prevent burning.
- Prepare Cheese Sauce: Reduce heat to medium-low. Add cream cheese, shredded cheddar cheese, chicken broth, and paprika to the skillet. Stir continuously until the cream cheese melts completely and the sauce is smooth and well combined.
- Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet. Spoon and coat them well with the creamy jalapeño cheese sauce. Allow everything to simmer together for 2–3 minutes so the flavors meld.
- Add Bacon and Garnish: Sprinkle cooked bacon bits evenly over the chicken and sauce. Cook for an additional 2–3 minutes until bacon is warmed through. Remove from heat and garnish with freshly chopped parsley.
- Serve: Serve hot alongside your choice of rice, pasta, or roasted vegetables for a complete meal.
Notes
- Remove jalapeño seeds before slicing if you prefer a milder spice level.
- This dish pairs well with rice, pasta, or roasted vegetables for a balanced meal.
- Use cooked bacon bits for convenience, or cook bacon yourself for extra flavor.
- You can adjust the amount of jalapeños or paprika according to your heat preference.
