Egg Salad Filling

  • 3 eggs
  • 2 tbsp Japanese mayonnaise
  • 1/2 tsp sugar
  • Salt and pepper to taste
  • Butter (optional, for spreading on bread)


Instructions

  1. Boil the eggs: Place eggs in a pot and cover with cold water. Bring to a boil and simmer for 8 to 10 minutes until fully cooked. Drain and transfer eggs to an ice bath or cold water to cool completely. Peel the eggs once cooled.
  2. Mash the eggs: In a bowl, roughly mash the peeled eggs with a fork or potato masher until slightly chunky, leaving some texture.
  3. Prepare the egg salad: Add 2 tablespoons of Japanese mayonnaise, 1/2 teaspoon sugar, and salt and pepper to taste into the mashed eggs. Mix until well combined and creamy.
  4. Prepare the bread: Optionally, spread a thin layer of butter on each slice of soft white bread to add richness and moisture.
  5. Assemble the sandwich: Evenly spread the egg salad mixture onto two slices of bread. Top with the remaining bread slices to form sandwiches.
  6. Trim and cut: Cut off the crusts to achieve the classic Tamago Sando look. Then slice each sandwich in half, creating two smaller sandwiches from the original four slices.
