- Combine jelly ingredients: In a medium saucepan, mix together the water, granulated sugar, lemon juice, and agar-agar powder.
- Cook the jelly mixture: Bring the mixture to a boil over medium heat while stirring constantly to dissolve the agar-agar powder thoroughly.
- Simmer and dissolve agar-agar: After boiling, reduce the heat and simmer for 1 to 2 minutes, continuing to stir to ensure the agar-agar is fully dissolved.
- Add honey (optional): Remove the saucepan from heat and stir in the honey if using, to add a subtle sweetness and flavor depth.
- Pour jelly over fruit: Carefully pour the hot jelly mixture over the arranged fruit in your glasses or mold, making sure to cover fruit evenly.
- Cool and chill: Allow the jelly to cool slightly at room temperature, then transfer to the refrigerator. Chill for at least 2 hours until the jelly is completely set and firm.
- Garnish and serve: Once set, garnish the fruit jelly with fresh mint leaves and serve chilled for a refreshing dessert experience.
