Instructions
- Shred the imitation crab: Take the imitation crab sticks and shred them into thin strips. Set aside in a mixing bowl.
- Prepare the cucumber: Cut the English cucumber into thin matchsticks. If the cucumber is very watery, gently squeeze out some of the excess moisture to prevent the salad from becoming soggy.
- Make the dressing: In a small bowl, whisk together the Japanese mayonnaise, rice vinegar, soy sauce, sugar, toasted sesame oil, and optional sriracha until smooth and well combined.
- Toss the ingredients: Add the shredded crab and cucumber into the dressing bowl. Gently toss everything together until evenly coated with the creamy dressing.
- Chill the salad: Refrigerate the prepared salad for 15 to 20 minutes to let the flavors meld and the salad to become nicely chilled.
- Garnish and serve: Just before serving, sprinkle toasted sesame seeds, chopped green onions, and optional thin nori strips over the top for added texture and flavor.
