Instructions
- Preheat the grill or oven: Set your grill or oven to 400°F (204°C) to prepare for cooking the foil packets.
- Parboil the potatoes: Boil the halved baby potatoes for 8–10 minutes until they are slightly tender but not fully cooked, then drain well to avoid sogginess.
- Combine ingredients: In a large mixing bowl, add the parboiled potatoes, sliced kielbasa, red and yellow bell peppers, and sliced onion, mixing them evenly.
- Prepare seasoning mixture: In a separate bowl, whisk together melted butter, olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper until well combined.
- Toss with seasoning: Pour the seasoning mixture over the potato and kielbasa mixture and toss thoroughly so all ingredients are coated evenly.
- Assemble foil packets: Divide the mixture into four portions and place each on a large piece of heavy-duty aluminum foil. Fold and seal each packet tightly to lock in moisture.
