Description

Korean Braised Potatoes, also known as Gamja Jorim, is a beloved Korean side dish featuring tender potato cubes simmered in a sweet and savory soy-based glaze, resulting in a glossy, flavorful accompaniment that pairs perfectly with a variety of meals.

Ingredients

Potatoes

  • 3 medium potatoes, peeled and cut into bite-sized cubes

Sauce and Seasonings

  • 1 tablespoon oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon honey or corn syrup
  • 1 cup water
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • Sesame seeds, for garnish

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into evenly sized bite-sized cubes to ensure uniform cooking.
  2. Sauté Potatoes: Heat 1 tablespoon of oil in a pan over medium heat. Add the potato cubes and lightly sauté for a few minutes, letting the surface get slightly golden but not browned.
  3. Add Sauce Ingredients: Pour in 1 cup of water, 2 tablespoons soy sauce, 1 tablespoon sugar, and the minced garlic. Stir gently to combine without breaking the potatoes.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer until the potatoes become tender, about 15 minutes.
  5. Reduce Sauce: Increase the heat slightly and cook uncovered, stirring occasionally, allowing the sauce to thicken and become glossy, making sure the potatoes remain intact.
  6. Finish and Garnish: Stir in 1 teaspoon of sesame oil, remove from heat, and garnish with sesame seeds before serving.
  7. Serve: Serve warm or at room temperature as a side dish to complement your meal.

Notes

  • Cut potatoes evenly for consistent cooking and texture.
  • Avoid over-stirring during simmering to prevent the potatoes from breaking apart.
