Ingredients

Chicken and Marinade

  • 500 g chicken thighs or breast, cut into cubes
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp honey or sugar
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil (for grilling)
  • Skewers (wooden or metal)


Instructions

  1. Prepare the marinade: In a bowl, combine the soy sauce, gochujang, honey (or sugar), sesame oil, minced garlic, and grated ginger. Mix thoroughly to create a flavorful marinade.
  2. Marinate the chicken: Add the cubed chicken thighs or breast to the marinade, ensuring all pieces are evenly coated. Cover and refrigerate for at least 30 minutes to absorb the flavors.
  3. Thread onto skewers: Soak wooden skewers in water beforehand if using. Thread the marinated chicken pieces onto the skewers evenly, leaving a small gap between each piece for even cooking.
  4. Preheat grill or pan: Heat your grill or a heavy skillet over medium-high heat. Brush with vegetable oil to prevent sticking.
  5. Cook the chicken skewers: Place the skewers on the grill or in the pan. Cook for 10–12 minutes, turning occasionally to ensure all sides are cooked through and nicely charred.
  6. Serve: Remove the skewers from heat and serve immediately while hot, perfect alongside rice or a fresh salad.

Notes

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • These skewers can also be cooked in the oven at 400°F (200°C) for 12-15 minutes or in an air fryer at 375°F (190°C) for 10 minutes.
  • For extra smoky flavor, add a sprinkle of toasted sesame seeds before serving.
