Description

Enjoy a soft and fluffy lemon coconut pull-apart bread, perfectly layered with sweet lemon zest, juice, and shredded coconut. This delightful bread is ideal for brunch, dessert, or a cozy snack, offering a wonderful balance of citrus freshness and tropical coconut flavors.

Ingredients

Dough Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon yeast
  • 3/4 cup warm milk
  • 2 tablespoons butter, melted

Filling

  • 1/2 cup shredded coconut
  • Zest of 1 lemon
  • 2 tablespoons lemon juice

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, sugar, and yeast thoroughly to ensure even distribution of the yeast and sugar for proper fermentation.
  2. Add Warm Milk and Form Dough: Pour in the warm milk and mix all ingredients until a dough starts to form. Use your hands or a spoon to bring it together.
  3. Knead the Dough: Transfer the dough to a floured surface and knead until it becomes smooth and elastic, approximately 8-10 minutes. Kneading develops gluten which gives the bread structure and softness.
  4. First Rise: Place the kneaded dough in a greased bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm spot for 1 hour or until doubled in size.
  5. Roll Out Dough: After rising, punch down the dough to release air bubbles and roll it out on a lightly floured surface into a rectangle about 1/2 inch thick.
  6. Apply Butter and Layer Flavors: Brush the melted butter evenly over the rolled dough. Sprinkle the shredded coconut and lemon zest over it, then drizzle the lemon juice to infuse a tangy flavor throughout the bread.
  7. Cut and Stack: Cut the dough into square or rectangular pieces. Stack these pieces on top of each other, layering the flavors inside the loaf. Place the stacked dough into a greased loaf pan to maintain shape during baking.
  8. Bake: Preheat your oven to 180°C (350°F). Bake the loaf for 25 to 30 minutes or until the top is golden brown and a skewer inserted into the center comes out clean.
  9. Cool and Serve: Allow the bread to cool slightly in the pan before carefully removing. Serve warm for the best texture and flavor, enjoying the tender, pull-apart layers infused with citrus and coconut.

Notes

  • Add a lemon glaze made from powdered sugar and lemon juice to the top for extra sweetness and shine.
  • Using sweetened shredded coconut can intensify the bread’s coconut flavor and sweetness.
  • Best enjoyed warm to fully appreciate its soft texture and flavor layers.
