Description

Soft and fluffy sweet rolls filled with a bright lemon sugar filling and topped with a tangy lemon glaze. These Lemon Sweet Rolls are perfect for a delightful breakfast or a sweet dessert treat, combining a tender dough with zesty citrus flavor and a sugary finish.

Ingredients

For the Dough:

  • 2 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon yeast
  • 1/2 cup warm milk
  • 1 egg
  • 1/4 cup butter, melted

For the Filling:

  • 1/3 cup sugar
  • Zest of 2 lemons
  • 2 tablespoons butter, softened

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Activate Yeast: In a small bowl, combine the warm milk and yeast. Let this mixture sit for 5 minutes until it becomes frothy, indicating the yeast is active.
  2. Make the Dough: Add sugar, egg, melted butter, and flour to the yeast mixture. Mix all ingredients well and knead the dough on a lightly floured surface until it becomes soft and elastic.
  3. First Rise: Place the dough in a greased bowl, cover it with a clean towel or plastic wrap, and allow it to rise in a warm spot for about 1 hour, or until it doubles in size.
  4. Prepare Filling and Roll Dough: Roll out the risen dough into a rectangle. Spread the softened butter evenly over the surface. Mix the sugar and lemon zest, then sprinkle this lemon sugar mixture evenly over the buttered dough.
  5. Shape Rolls: Starting from one edge, roll the dough tightly into a log. Cut the rolled dough into 8 equal slices to form individual rolls.
  6. Second Rise: Arrange the rolls in a greased baking dish. Cover them and let them rise again for about 20 minutes until they puff up.
  7. Bake: Preheat the oven to 180°C (350°F). Bake the rolls in the oven for 20 to 25 minutes, or until they turn golden brown and are cooked through.
  8. Glaze: While the rolls are still warm, whisk together powdered sugar and lemon juice to make a tangy glaze. Drizzle the glaze generously over the warm rolls before serving.

Notes

  • Add cream cheese to the glaze for a richer, creamier finish.
  • These rolls are best served warm for optimal softness and flavor.
  • Store leftovers in an airtight container to keep them fresh for up to 2 days.
