Beans and Pesto

  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • ¼ cup basil pesto
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Garnish

  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh basil leaves, for garnish


Instructions

  1. Heat olive oil: Warm 1 tablespoon of olive oil in a skillet over medium heat to prepare for cooking the beans.
  2. Cook beans: Add the drained and rinsed cannellini beans to the skillet and cook for 3 to 4 minutes, stirring occasionally, until the beans are heated through.
  3. Add pesto and lemon: Stir in ¼ cup of basil pesto, 1 tablespoon of fresh lemon juice, and 1 teaspoon of lemon zest, mixing well to evenly coat the beans with flavor.
  4. Season: Taste and season the beans with salt and black pepper according to your preference.
