Description
An indulgent lobster pot pie featuring a creamy seafood filling with tender lobster meat, peas, and carrots, all encased in a flaky, golden puff pastry. This luxurious dish is perfect for special occasions or a comforting meal.
Ingredients
Filling
- 2 tbsp butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp flour
- 2 cups seafood or chicken broth
- 1 cup heavy cream
- 250 g cooked lobster meat
- 1/2 cup peas and carrots
- 1/2 tsp thyme
- Salt and pepper to taste
Topping
- 1 sheet puff pastry
- 1 egg, beaten
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for baking the pot pie.
- Sauté Aromatics: Melt the butter in a pan over medium heat, then add the chopped onion and sauté until soft and translucent.
- Add Garlic: Stir in the minced garlic and cook briefly until fragrant, about 30 seconds to a minute.
- Make Roux: Sprinkle the flour into the pan and stir continuously for 1 minute to cook out the raw flour taste.
- Add Liquids: Gradually whisk in the seafood or chicken broth followed by the heavy cream, stirring constantly until the mixture thickens to a creamy consistency.
- Combine Filling: Stir in the cooked lobster meat, peas and carrots, thyme, salt, and pepper. Mix well to combine all ingredients evenly.
- Prepare Pie: Transfer the seafood filling into a baking dish, spreading it out evenly.
- Top with Pastry: Cover the filling with the sheet of puff pastry. Trim any excess edges and press down lightly around the edges to seal.
- Egg Wash: Brush the top of the pastry with the beaten egg to encourage a golden, shiny finish.
- Bake: Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the pastry is puffed and golden brown.
- Cool and Serve: Remove from oven and allow to cool slightly before serving to let the filling set.
Notes
- Substitute shrimp or crab if lobster meat is unavailable for a budget-friendly alternative.
- Do not add the puff pastry topping while the filling is too hot to prevent sogginess – let the filling cool slightly if needed.
- For a crispier crust, pierce the puff pastry lightly with a fork before baking to allow steam to escape.
- Ensure all seafood is pre-cooked to maintain texture and avoid overcooking during baking.
